“We use underground pipeline, an insulated tank and a vacuum system for collection: it keeps the sap cool & bacteria-free, producing a lighter grade maple syrup,” says Jack Beamish. Jack and Mary Joan’s son Blake’s love of maple syrup fuelled the family farm transition from milking cows to tapping trees. Blake and Mary Joan work the market stall while Jack continues to work the farm. Mary Joan gladly shares maple recipes and extols the virtues of maple sugar, “which is easy to digest,” while Blake’s farm-whipped maple butter inspires consumers as far-flung as Switzerland!
