“Shortly after moving to the Caledon Hills in 2003, we drove by a little general store with a sign offering maple syrup buckets. We did a U-turn, bought 12 buckets and that was the beginning of our ‘addiction’,” recalls Brent. Today more than 600 trees are tapped with a vacuum pipeline system and another 100 with the traditional buckets and spiles that inspired their syrup making venture. Initially, Jen & Brent simply shared their modest syrup harvest with family and friends. This year, 525 litres of syrup and 120 pounds of maple cream is being enthusiastically welcomed by shoppers at the Caledon Farmers’ Market as well as the onsite sugar shack.
